「those」は「customs」の言い換え、同じ単語の使用を避けている。
(「customs」が複数形なので、「that」ではなく「those」を使用) - People eat dinner much later than we do.
「do」は動詞の「eat」の言い換え、同じ単語の使用を避けている。
「much」は強調 - even though ～ ～だけれども / ～にもかかわらず
The people looked as happy as we were, even though their habits were different. (彼らの習慣は異なるけれども～)
「we were」の部分は「we were happy」の略 「looked」と「were」で時制の一致 - become interested in ～ ～に興味を持つ
